Salt (or sodium chloride) is essential for the human body, but its excessive consumption can lead to the development of various diseases. The maximum recommended daily intake of sodium for adults is 2 grams, which corresponds to 5 grams of table salt.
Salt in meat products is a multifunctional component that affects structure/consistency, microbiological stability and also taste. During the production of meat products with a low salt content, it's important to pay attention not only to compensating the taste, but also to keep the functions performed by salt.
